Vegetarian Chili

Fall is officially here! Cold weather is coming and so are the holidays. In our family, there is nothing more heart (and tummy!) warming than having a pot of chili on the stove that everyone can pick from throughout the day when hanging out for a visit. This was one of my recent creations, and it was an immediate favorite. Enjoy!

Recipe: Tomato & squash medley with noodles

Tomato & Squash Medley with Noodles

1/2 of a yellow onion
1 tbsp mined garlic
1 tsp turmeric
1 tbsp Italian seasoning
2 carrots, chopped
1 cup stewed tomatoes
3-5 button mushrooms, sliced
Half cup chopped Yellow squash
Half cup chopped zucchini
1 package of noodles

Peanuts (optional)
Shrimp (optional)

Stir in ingredients up to water (enough to coat bottom of pan) and put on low heat for 15 minutes with a cover, stirring frequently. Add carrots, and a little water if necessary, and cover for another 10 minutes. Stir in tomatoes, and let sit for five minutes, stirring frequently. Allow to simmer lightly.

Fill another pot of water for noodles. When at a boil, pour in noodles and bring down to medium heat. Here, add the rest of the ingredients to the tomato mixture, mix well and cover while noodles finish cooking (7-9 minutes).

Place noodles on plate, top with tomato squash sauce and sprinkle with peanuts (if desired). This meal also can be augmented with shrimp. Serve warm, and enjoy!


Baked Squash with Spicy Bulgur Pilaf Recipe

I volunteer every month for an event called Produce On Wheels With Out Waste (POWWOW), and come home with bushels of food as a thank you. The event allows foods that may not be pretty enough for the market or are leftovers to still get to people who are in need. The event allows you to purchase 60 lbs of food for $10. I love this program!

So when I got home a couple of weeks ago and I had so many dang acorn squash that I didn’t know what to do.

Patriotic Pigments: Eat your red, white & blue!


Looking down at my breakfast this morning, luscious berries in a cushion of oatmeal, I was suddenly overcome with patriotism. Well, at least I was struck by the patriotic resemblance to our nation’s red, white and blue banner as Fourth of July nears.

Whose plate is turning “one” today? Yours!

In case you didn’t know, today is a special day: Happy 1st Birthday, ChooseMyPlate.Gov!

While I haven’t personally been utilizing this great resource, a cursory look at the website today has impressed me. With a clean, user-friendly interface for the Internet surfer, you can learn about all of your basic food groups: Fruit, veggies, grains, and protein foods, as well as oils and dairy. They give you an idea on how much should be in your plate of each, how to measure them, and the health benefits of each, among other helpful tips. The site also has some great tabs with other related information regarding physical activity (how to be more active, and why), weight management tips/tools and resources (BMI calculator, calorie burning charts to help you keep focused, etc), healthy eating tips, and a helpful little chart regarding empty calorie foods. Empty calories are foods high in energy-providing calories from solid fats and/or added sugars, but contain little to no nutritional value. I even saved this chart to my computer, myself.

Good stuff.

While the website itself is great for navigating your nutrition choices, the USDA has certainly established its presence on all manner of social media, as well. Want to get more interactive with your plate? Take a photo of your ChooseMyPlate inspired meal, and post it in their Flickr Pool (this actually excites me a little, where is my camera??). Want nutrition and food-related news from the government and legislative side? Like the USDA’s page on Facebook. Want tips and healthy eating reminders and resources? Head on over to their Twitter page.

And then there’s the USDA on YouTube, with sundry videos on everything from new food safety cell phone apps to new endeavors taken on by the USDA to help consumers eat, and shop, healthier.

Talk about a cornucopia of information for the nutritionally ambitious. So head on over to wish ChooseMyPlate a happy birthday, and while you’re at it, see what they have to offer. You might learn a thing or two you didn’t know that you didn’t know about your dinner plate.
